Two of our favorite proteins on one plate! Both bison and shrimp come from the “leanest” protein category, which means we can have a full seven (combined) ounces cooked!
In this meal, we prepped a couple of small bison rib eyes and a skewer of three medium shrimp. Added a couple of skewers each of zucchini & orange bell pepper. Lightly brushed the meat and the shrimp with the two servings of healthy fat we’re allowed with a portion of leanest meat, and sprayed the veggies with some olive oil cooking spray. Ground some salt and pepper on everything and threw it all on the grill. Simple and tasty. Cutting the veggies and skewering the food add some prep time, so this was a weekend dish.
